AKUCELL® AF 2785 is especially recommended for use in bakery products. Concentrations of only 0.10-0.30% will improve moisture retention, texture and oil holdout when added to the dry mix. A typical recipe for a cake mix, based on 0.10% AKUCELL AF 2785, would have the following composition:

The AKUCELL should be mixed with the flour and pyrophosphate before adding the other ingredients.
The addition of AKUCELL AF 2785 or AF 2805 to this type of product, provides the following benefits:

  • greater moisture retention
  • prolonged freshness
  • reduced loss of quality through oil holdout.
